Apple Coleslaw

Ingredients
Honey Sesame Dressing:
1/4 cup apple cider vinegar
1 cup mayonnaise
1/3 cup sesame seeds
1/3 cup local honey
2 tsp kosher salt
1 tsp ground black pepper
Salad:
1 medium cabbage, shredded
2 large carrots, peeled and julienned
1 bunch scallions, thinly sliced
1/2 cup flat leaf parsley, chopped
4 apples, julienned (Fuji apples preferred)
Directions
In a medium bowl, whisk together the dressing ingredients and set aside.
In a large bowl, combine the salad ingredients and season with the dressing. Refrigerate at least one hour before serving, mixing the salad at least one more time to evenly distribute the dressing.
