Caramelized Onion Potatoes

Ingredients

2 lbs potatoes, cleaned and cut into wedges

1/2 each yellow onion, sliced

2 Tbsp olive oil

TT salt and black pepper

Directions

Preheat oven 350 degrees.

In a large bowl, toss the potatoes with 1 Tbsp oil and season with salt and pepper. Spread on to a sheet pan and roast 25-30 minutes, until tender.

In a large skillet, on medium-high heat, warm 1 Tbsp oil. Add the onions, season with salt and pepper and sauté 8-10 minutes, until caramelized.

Toss the potatoes together with the onions and serve.
