Hāmākua Mushroom Beef

Serves 4

Ingredients

2 lbs local ground beef

1 each yellow onion, 1/2 grated, 1/2 sliced

1 1/2 tsp salt

1 tsp black pepper

2 Tbsp sauce (choose Worcestershire, ketchup, A1 or BBQ sauce)

*optional 1 tsp garlic powder or 2 cloves garlic, minced

1/4 cup canola oil

1 pack Hāmākua mushrooms, sliced

1/4 water + 3 Tbsp AP flour

4 cups steamed rice

Directions

In a large bowl, combine ground beef, grated onion, salt, pepper, sauce, and optional ingredients if desired. Form into 4 patties.

In a large skillet, over medium-high heat, warm the oil until hot. Sear the patties until brown on both sides. Remove from pan and set aside.

In the same pan, add the sliced onions and sauté 5 minutes. Add the mushrooms and sauté a few minutes more.

Place the patties back in the pan on top of the onion and mushroom mixture. Add enough water to just barely cover the patties (about 3 cups). Bring to a boil, reduce heat and simmer covered for 10 minutes. Flip the patties over and make sure nothing is sticking to the bottom of the pan, recover and continue simmering another 10 minutes, until patties are cooked through.

Remove the patties from the pan and set aside. In a small bowl, whisk together the water and flour to make a slurry.

Bring the liquid in the pan to a boil and whisk in the slurry, cook another 2 minutes, add the patties back to the pan and simmer 3-5 more minutes until the sauce has thickened. Serve with hot rice.
