Taʻape Fish Sticks
Recipe by Kēhau Springer and Conservation International Hawai‘i
Ingredients:
~1 pound of fish filets
2 c. panko (Japanese style breadcrumbs)
1 c. flour
1 ¼ c. water
~2 c. frying oil of your choice (i.e. avocado or canola oil)
¼ teaspoon salt
¼ teaspoon black pepper
Sauce:
1 clove garlic, finely grated
2 tsp. green onion, chopped
½ c. shoyu
4-5 tbsp. Sugar
Directions:
Mix all the sauce ingredients together and set aside
Filet and debone taʻape and cut filets into 3 inch strips
Season fish strips well with salt and pepper
Mix the flour and water in a bowl to make a slurry
In another bowl, add in ½ bag of panko Toss the taʻape strips in the slurry and coat evenly. Then transfer taʻape strips in the panko. Really press the panko on the fish so they have a good crust.
Over medium heat, heat enough oil in a skillet to fill the skillet about 1½ - to 2-inches deep
When oil is hot, add fish sticks in a single layer in the skillet without crowding the skillet
Fry for 3 minutes on each side, until the fish sticks are nicely browned on the underside
Remove and let cool on a few paper towels Drizzle the sauce over the taʻape strips, serve, and enjoy!
