D.I.Y. Burrito Bar

Makes 12 burritos

Ingredients

2 cans pinto beans

splash of olive oil

TT salt

1 Tbsp canola oil

1 cup cheddar cheese, shredded

1 lb local ground beef

1/2 each yellow onion, chopped

*optional 1 Tbsp chili powder

*optional 1 tsp cumin

*optional 1/4 tsp cayenne pepper

12 pack large flour tortillas, warmed

1 each local tomato, chopped

1/4 head of cabbage, sliced thin

Directions

In a medium saucepan, warm the beans in their liquid with a splash of olive oil and pinch of salt. Mash the beans with a fork or potato masher as they cook. Once hot and fully mashed, turn off the heat and stir in the cheese.

In a large skillet, over medium-high heat, warm the canola oil and sauté the beef and onions with salt and optional spices, until browned. Set aside to cool slightly.

Set up your burrito bar with tortillas, beans, beef, tomato and cabbage and let everyone build their own.

*Optionally: After building your burrito, wrap it in foil and place in a 350 degree oven for 20 minutes.
