Pork Sari Sari

Ingredients

1 Tbsp canola oil

1 lb local pork (or fish, chicken, shrimp, beef, or tofu), sliced thin

TT salt and black pepper

1/2 each yellow onion, sliced thin

1 each tomato, diced

1 each zucchini, halved lengthwise and sliced

3 each Japanese eggplant, sliced

1 bunch green beans, sliced into 2 inch pieces

3-4 cups water

2 Tbsp vinegar

2-4 Tbsp shoyu

*optional 1 bay leaf

*optional TT patis (fish sauce), black bean sauce and ginger

Directions

In a large stockpot, on medium-high heat, warm the oil, add the pork, season with salt and pepper and cook 8-10 minutes.

Add onions and tomato, cook 5 minutes. Add zucchini, eggplant, green beans, water, vinegar, shoyu and optional ingredients (if desired) and bring to a boil.

Reduce heat to medium-low and simmer 15-20 minutes, until the vegetables are tender.
