ʻUlu Brownies

Ingredients
½ cup butter, unsalted
¾ cup brown sugar
2 eggs
¾ cup all-purpose flour
¼ cup cocoa powder
¼ tsp salt
½ tsp vanilla
½ tsp baking powder
142 g baker’s ripe ʻulu
130 g chocolate chips
Directions
Preheat oven 350°F
In a small saucepan, melt the butter and transfer to a large mixing bowl.
Add brown sugar and vanilla to the melted butter and whisk. Slowly whisk in the eggs.
In a mixing bowl, place ʻulu with ¼ cup hot water and let sit for 2 minutes, then mash with a fork, set aside to cool.
Add the ʻulu to the butter mixture and whisk until smooth.
In a separate mixing bowl, combine flour, cocoa powder, salt, and baking powder and whisk together.
Add the dry ingredients in 1/3 increments to the wet ingredients and mix with a plastic spatula. *Do not over mix.
Fold in the chocolate chips. Pour the batter into a 9 x 13“ pan lined with parchment paper. Bake 25 minutes, or until a toothpick comes out clean when inserted.
