Beef Ramen Veggie Stir-Fry

Ingredients

1 Tbsp canola oil

1 local veg pack (zucchini/bell pepper/carrot/celery/onion)

1 lb local beef, sliced thin

1/4 cup shoyu

1 Tbsp sugar

1 Tbsp rice vinegar (apple cider or white vinegar works too)

1 clove garlic, minced

2 pks ramen, seasoning packs discarded

*optional 2 green onions, sliced

*optional sriracha

Directions

In a large skillet, over medium heat, heat the oil, add the vegetables and cook about 10 minutes, until tender. Add the beef and cook 5 minutes. Drain off excess fat.

In a small bowl, combine the shoyu, sugar, vinegar and garlic.

Fill a medium saucepan with water and bring to a boil. Add the ramen and cook 2-3 minutes, until tender. Drain.

Add the cooked ramen and sauce to the skillet and toss to combine.

Garnish with green onions and serve with sriracha if desired.
