Tomato-Lemon-Basil Pasta

Serves 4
Ingredients
1 lb elbow macaroni
2 each local tomatoes, chopped and drained on a paper towel (to absorb the juice)
1 each lemon
1 sprig basil, thinly sliced
1 each yellow onion, chopped
1/4 cup olive oil
TT salt and black pepper
*optional 3 cloves garlic, minced
*optional 1/2 cup parmesan, grated
*optional 1 pinch red chili flake
Directions
Bring a large pot of salted water to a boil. Add the pasta and cook 7-8 minutes, until al dente.
In a small bowl, whisk together olive oil, garlic, juice of 1 lemon, salt and pepper and set aside.
When the pasta is ready, strain it and add it to a large bowl with the tomato and basil. Pour the lemon vinaigrette over the top and stir to combine.
Garnish with parmesan cheese and chili flake if desired.
