Broccoli Pasta

Serves 6

Ingredients

4-5 cups (about 1 head) broccoli, cut into florets

5 cloves garlic, smashed

2 Tbsp olive oil

TT salt and black pepper

1 lb pasta

1 1/2 Tbsp olive oil

1 clove garlic, minced

1/2 cup panko breadcrumbs

*optional zest of 1 lemon

*optional 1 1/2 Tbsp lemon juice

*optional 2 Tbsp parsley, chopped

Directions

Preheat oven 400 degrees.

Toss the broccoli with smashed garlic cloves, 2 Tbsp oil, salt and pepper and roast about 15 minutes, until tender. Set aside.

Bring a large pot of salted water to a boil. Cook the pasta about 11-12 minutes, until al dente (see box for exact cooking time). Drain, reserving 1/2 cup of the cooking liquid.

In a medium skillet, over medium heat, warm 1 1/2 Tbsp oil, add the minced garlic and cook 1 minute. Add the breadcrumbs and cook 3-4 minutes, tossing and toasting until golden brown. Add the optional ingredients if desired.

In a large bowl combine the roasted broccoli, cooked pasta and cooking liquid. Add the garlic-breadcrumbs and toss well. Enjoy!
