Roasted Tomato Garlic Pasta

Ingredients

3 local tomatoes, large dice

8 cloves garlic, chopped

1/4 cup (1/2 stick) butter, sliced

*optional 1/2 tsp red chili flakes

*optional 1 Tbsp sugar

*optional 1/2 cup wine

*optional splash of fish sauce or 2 anchovy fillets (for umami)

1 lb pasta

Directions

Preheat oven 425 degrees.

In a 13x9 baking dish combine tomatoes, garlic, butter, and any or all of the optional ingredients and roast 30-40 minutes. Remove from oven, let cool 10 minutes and then smash the mixture with a spoon until it resembles applesauce.

Bring a large pot of salted water to a boil and cook the pasta 11-12 minutes, until al dente (check the box for exact cooking time). Drain and reserve 1/2 cup of the cooking liquid.

Return the pasta to the pot with the tomato mixture and 1/2 cup cooking liquid and cook over medium heat for 3 minutes. Stir and enjoy.
